4 small pieces of goat’s cheese
2 sprigs fresh thyme
1 clove garlic, crushed
1/3 cup extra virgin olive oil
cracked black pepper
4 thin lemon slices, halved
300g mixed salad leaves, washed & crisped
slices of country-style bread, toasted
