Grilled Goat’s Cheese Salad
Here is how to make a taste Grilled Goat’s Cheese Salad.
Ingredients:
- 4 small pieces of goat’s cheese
- 2 sprigs fresh thyme
- 1 clove garlic, crushed
- 1/3 cup extra virgin olive oil
- cracked black pepper
- 4 thin lemon slices, halved
- 300g mixed salad leaves, washed & crisped
- slices of country-style bread, toasted
(makes 4 servings)
Procedure:
1. Place the cheese in a container which will fit tightly.
2. Strip the thyme leaves from the stalk into a bowl.
3. Add garlic, oil and cracked pepper and mix well.
4. Pour over the cheese and place lemon slices between the cheese.
5. Cover and marinate in the refrigerator for 4-6 hours.
7. Turn cheese in the marinade once or twice.
8. Preheat the grill.
9. Grill the cheese for 2 minutes each side and the lemon slices until rosy tinged and softened a little.
10. Arrange salad leaves on 4 plates.
11. Place a peice of cheese and lemon slice on each and drizzle with marinade.
12. Toast the bread and serve with the salad.
