Witlof Salad with Pecans

Can’t wait for your next salad treat? Want some Witlof Salad with Pecans? Here’s how to make one. Enjoy!

Ingredients:

  • 5 heads witlof, washed
  • 1 red delicious apple, quartered
  • 1 granny smith apple, quartered
  • juice of 1 lemon
  • 200g young rocket leaves
  • 160g pecan nuts, coarsely chopped and toasted
  • 100g gorgonzola or blue castello, crumbled

For the dressing :

  • 4 tablespoons olive oil
  • 4 tablespoons walnut oil
  • 4 tablespoons sherry-wine vinegar
  • 1 large spring onion, finely chopped
  • salt and pepper

(serves 6 persons)

Procedure:

1. Cut the witlof in half, lengthwise then lay the witlof cut side down on a board and cut the leaves into thin strips.
2. Toss apples with the lemon juice.
3. Wash the rocket leaves and drain well.
4. In a bowl, combine witlof, apple slices, rocket, toasted pecans, and blue cheese.
5. Whisk together walnut and olive oil, sherry-wine vinegar and spring onion, and salt and pepper to taste.
6. Drizzle over the salad and toss.
7. Serve immediately.
